Job Title: Interim General Manager / Relief GM (8\-12 Week Contract)

Location: The Old Dog, Thorpe, Ashbourne, Derbyshire (DE6 2AT) Contract: 8\-12 Weeks (Immediate Start) Rate: £160 \- £180 per day (DOE) \+ Daily Travel Contribution

The Venue \& The Vibe The Old Dog is an independent, fiercely busy, and highly profitable Gastropub located in the heart of Dovedale. We cater to a massive cross\-section of trade—from muddy\-booted hikers needing a quick pint and a cob, to destination diners spending £35\+ per head on a Saturday night. Our ethos is strictly: "Serious food, without the serious face."

The Mission Summer is coming, and we are expanding. We are currently building a brand\-new bar and kitchen infrastructure while simultaneously training up our core permanent team for the peak season.

We have a temporary GM gap that we need to fill immediately. We do not need you to rewrite our menus, change our suppliers, or launch new concepts. We need a hardcore, data\-driven operator to step onto the floor, hold the fort, and execute our existing playbook flawlessly while ownership manages the build and expansion.

Your Operational Mandate:

  • Enforce the "Two\-Tier System": You must ruthlessly manage our yield. The inside restaurant has a high booking ration for booked diners whilst the "Outpost" (our outdoor unit) handles the high\-volume, fast\-turnover trade. You need to keep these flows strictly separate and efficient.

  • Protect the Margins: We run a tight ship. You will be expected to maintain our core KPIs during your tenure: Food GP at 70%\+, Wet GP at 70%\+, and Wage Cost strictly under 30%.

  • Team Leadership: Babysit the rota against fluctuating daily sales, manage the day\-to\-day floor operations, and ensure the front\-of\-house team continues to deliver honest, high\-quality hospitality during a period of site development.
Who You Are:
  • A seasoned GM or career Relief Manager who thrives in high\-volume, independent food\-led pubs.

  • A pure executor. You are happy to run a highly successful existing strategy rather than trying to leave your own "mark."

  • Rota\-savvy, commercially aware, and completely unflappable on a 250\-cover Sunday service.

  • Able to commute daily to DE6 2AT (Travel contribution provided to offset mileage).
