Pillo Hotel Ashbourne \| Future DoubleTree by Hilton

Create a place people want to return to

We believe great hospitality starts with how we make people feel. A warm welcome, a team member who remembers a preference, or a meal that becomes part of a special memory can give someone a reason to return.

Creating those experiences starts with our people. When a team feels supported, takes pride in its work and has the confidence to make decisions, guests feel the difference.

As we prepare to become a DoubleTree by Hilton, we have an opportunity to shape the future of food and beverage at Pillo Hotel Ashbourne. We want to build a destination our guests recommend, our local community enjoys and our team is proud to be part of.

We are looking for a Food \& Beverage Manager who shares that ambition—and wants to help bring it to life.

Why join us?

You will join at a moment when your leadership can make a lasting difference.

Our transition to DoubleTree by Hilton creates an opportunity to develop our food and beverage offering, strengthen our service culture and reach new customers. You will help shape that journey, bringing your experience and ideas to the way we operate every day.

Working with the senior management team, you will have the opportunity to develop people, influence our offering and build a department where excellent service and strong commercial performance support each other.

We want our people to grow with the hotel. This is a chance to take ownership of a significant part of our business while developing the next stage of your own career.

What you will help build

Reporting to the Operations Manager, you will lead our food and beverage service operation across restaurant, bar, meetings and events, taking responsibility for the guest experience, team development and departmental performance.

A guest experience worth returning for

  • Be a visible presence on the floor, connecting with guests and supporting the team during service.

  • Build consistent service standards while giving colleagues the confidence to make each interaction personal.

  • Take ownership of guest feedback, resolve concerns with care and turn what we learn into improvements.

  • Work closely with colleagues across the hotel to deliver quality and consistency throughout the guest experience.
A team that takes pride in its work
  • Recruit, welcome, train and develop colleagues who care about hospitality.

  • Set clear expectations and provide regular coaching, feedback and recognition.

  • Build confidence through practical training and opportunities to learn across the operation.

  • Create a culture where people communicate openly, take responsibility and support one another.

  • Plan staffing and rosters around business needs, balancing service quality, team wellbeing and productivity.
An operation with a strong commercial future
  • Take ownership of departmental revenue, payroll, purchasing, stock and cost control.

  • Help develop budgets and forecasts, review performance and act on opportunities to improve results.

  • Work with the senior management team to develop our food and beverage offering, improve performance and create experiences that appeal to hotel guests and the local community.

  • Partner with Sales and Events to turn customer expectations into well\-planned, smoothly delivered occasions.

  • Maintain high standards of food safety, hygiene, responsible alcohol service and workplace safety.

  • Help prepare the department for the standards and expectations of our future DoubleTree by Hilton identity.
What matters to us

We are looking for someone who enjoys being close to the operation and understands that leadership happens in everyday moments: supporting a colleague during a busy service, listening to a guest or following through on a promise.

You care about detail and understand the numbers behind a successful department. You can create an excellent guest experience while managing resources responsibly.

You bring calm judgement, clear communication and the willingness to take ownership. You enjoy helping others improve, and you recognise that a strong team is essential to lasting success.

The experience you will bring

  • At least five years’ experience in food and beverage operations within a four\- or five\-star hospitality environment, including at least two years at senior management level.

  • Strong knowledge of restaurant, bar and conference or event service.

  • Experience leading teams, delivering training and managing performance.

  • Confidence with budgets, forecasting, rostering, payroll and stock control.

  • Strong organisational, communication and problem\-solving skills.

  • Familiarity with hotel and point\-of\-sale systems, such as Opera and Micros or similar, alongside Microsoft Office.

  • Flexibility to work the varied schedules that hospitality requires.
A first aid qualification would be an advantage.

What you can expect from us

  • Trust and space to bring your ideas forward.

  • The opportunity to influence our food and beverage offering and service culture.

  • Support from the Operations Manager and wider senior management team.

  • A leading role in our transition to an internationally recognised hospitality brand.

  • Opportunities to develop as our business grows.

  • The satisfaction of seeing your contribution reflected in your team, our guests and our results.
