The Role
We are seeking an experienced and driven Restaurant Manager to lead our front of house team and oversee the day\-to\-day running of the restaurant.
This is a hands\-on role requiring strong leadership, excellent organisational skills, and a genuine passion for delivering outstanding guest experiences. You will work closely with the Chef Patron and senior management team to maintain the high standards for which The Three Fishes is known.
Key Responsibilities
- Lead, motivate, and develop the front of house team
- Ensure exceptional service standards are consistently delivered
- Oversee daily restaurant operations, including service, reservations, and staffing
- Manage rotas, payroll oversight, and team performance
- Maintain excellent communication between front of house and kitchen
- Handle guest feedback professionally and resolve any issues promptly
- Ensure compliance with health \& safety, licensing, and company procedures
- Drive a positive team culture and uphold the values of the business
- Previous experience as a Restaurant Manager or Assistant Manager within a quality\-led establishment
- Strong leadership and team management skills
- Excellent knowledge in wine ideally with a WSET level 2 but not essential
- Strong wine knowledge and a passion for guest dining experiences preferred
- Excellent communication and organisational abilities
- A passion for hospitality and attention to detail
- The ability to remain calm and decisive in a fast\-paced environment
- A proactive and hands\-on approach to service

Schedule: Wednesday–Sunday, including evenings and bank holidays
