Rooftop/Bar Manager

Responsibilities

Bar \& cocktails

• Run bar operations and keep cocktail quality, speed and presentation consistent


• Train the team on recipes, specs and techniques


• Help develop and refresh the cocktail menu

• Manage stock levels, orders and supplier relationships


• Run weekly stock counts and track waste, breakage and variances


• Hit agreed beverage cost (pour cost) targets

• Make every guest feel welcome, from walk\-ins to VIPs


• Sell proactively: upsell premium spirits, food pairings and bottles, and push the team to do the same


• Handle complaints quickly and professionally

• Coordinate private events and recurring events (e.g. DJ sunsets) from brief to close: setup, staffing, timing, service and breakdown


• Work with management on event menus, packages and client communication on the day

• Plan shifts, brief the team before service and lead by example


• Coach staff on service standards and sales

• 2\+ years of bar experience, at least 1 in a supervisory or management role


• Strong cocktail skills (classics \+ signature)


• Hands\-on inventory and cost control experience


• Events experience is a strong plus


• Languages: Portuguese and English required; Spanish is a plus


• Reliable and punctual, calm under pressure, a natural with people


• Available evenings, weekends and holidays
