About the Role
Department of Magic and Monkey Barrel Comedy are looking for an experienced Cocktail Consultant to join us for an intensive one\-month project to review, develop and professionalise our cocktail offering across both businesses.
This is an opportunity for an experienced industry professional to have a meaningful impact on two distinctive Edinburgh hospitality brands — developing the drinks offering, creating robust systems and standards, and leaving the team with the knowledge and tools to deliver consistently excellent cocktails.
We are particularly interested in someone who can combine creative cocktail development with strong commercial and operational thinking.
The initial engagement will be for one month, with the potential for an ongoing relationship following completion of the project. This could include quarterly staff refresher training, menu development and a fixed number of consultancy days per quarter.
What You'll Do:
- Review our existing cocktail offerings across Department of Magic and Monkey Barrel Comedy.
- Design and develop cocktail designs appropriate to each brand, audience and venue.
- Create and test new cocktail recipes.
- Establish consistent specifications, presentation and service standards.
- Balance creativity with speed of service, practicality and profitability.
- Write and implement a comprehensive Cocktail Standards Manual.
- Establish clear recipes, measurements, preparation methods, presentation and service specifications.
- Develop practical systems that can be maintained by venue management and bar teams after the consultancy ends.
- Build reporting templates to allow management to monitor cocktail performance, compliance, wastage and sales.
- Develop training materials for bar staff and management.
- Deliver practical staff training across our venues.
- Train managers and supervisors to maintain cocktail standards and support ongoing staff development.
- Review our existing drinks suppliers and identify opportunities for improved quality, value and consistency.
- Review ingredient usage and margins.
- Ensure the cocktail programme is commercially sustainable as well as creatively strong.
By the end of the one\-month consultancy, we would expect to have:
- A refreshed and clearly defined cocktail programme for Department of Magic and Monkey Barrel Comedy.
- A complete set of approved cocktail recipes and specifications.
- A Cocktail Standards Manual.
- Staff training materials and training delivered to the relevant teams.
- Clear operational standards for cocktail preparation and service.
We're looking for someone with significant professional experience in cocktails and hospitality, ideally with experience in a consultancy, Head Mixologist, Bar Manager, Beverage Manager or similar senior role.
Following the initial project, there may be opportunities for:
- Quarterly staff refresher training
- Seasonal or new\-menu development
- Periodic cocktail programme reviews
- Supplier and product reviews
- Ongoing standards and costing reviews
- A fixed number of consultancy days per quarter
Pay: £1,000\.00 per month
