Restaurant Manager \- The House by Hilly Gant, Braintree, Essex
Salary: £37,000\-£40,000 basic depending on experience, up to £50,000 with performance bonus
Contract: Full\-time, permanent

About us
We are an independent restaurant on New Street, Braintree, serving modern British food built on quality, locally sourced produce. We have traded since 2015 and hold 2 AA Rosettes (our second awarded in 2023\), placing us among the top 10 restaurants in Essex. We are looking for a manager who wants to run a warm, polished dining room and help us keep and build on that standard.
The role
You will lead front of house day to day and take responsibility for guest experience, team performance and the restaurant's financial results. You will work closely with the Head Chef and the Directors.
- Deliver consistently excellent, relaxed\-but\-precise service that protects our AA Rosette standard
- Recruit, train, schedule and motivate a front\-of\-house team of \[number], including regular briefings and coaching
- Own the P\&L for front of house: sales against budget, gross profit, labour cost and wastage, reporting weekly to the Directors
- Manage bookings, covers and private dining, and grow repeat and occasion business
- Build the drinks offer with our wine supplier: list updates, staff wine training and margin control
- Handle guest feedback and online reviews (Google, Tripadvisor, OpenTable) promptly and professionally
- Keep the premises legally compliant: licensing, food safety and allergen procedures, health and safety, and staff records
- Run rotas, holidays and payroll inputs, and keep the reservation and till systems in good order
- Work with the Head Chef and our Events Co\-ordinator on menu launches, weddings, private events, catering and seasonal promotions
- About youEssential:
- At least 3 years managing or assistant managing a quality independent, fine\-dining or rosette\-standard restaurant
- A record of leading a team and raising service standards
- Confident with the numbers: gross profit, labour cost percentage, rota planning
- Food Safety Level 2 or above (Level 3 preferred) and sound allergen knowledge
- The right to work in the UK
- A Personal Licence, or willingness to obtain one within \[8 weeks] at our cost
- WSET Level 2 or above
- Experience with reservation systems such as OpenTableWhat we offer
- £37,000\-£40,000 basic depending on experience, plus a performance bonus based on annual targets (part paid through the year, the balance after year\-end), taking total earnings to up to £50,000
