Branch Manager – Maccaruna

Location: Cambridge city centre
Hours: Full\-time, 40 hours including weekends
Salary: Competitive, dependent on experience

Maccaruna is looking for an experienced, energetic and highly hands\-on Branch Manager to lead our Cambridge pasta and gelato restaurant.

This is not an office\-based management position. You will work alongside your team on the floor, lead busy services, serve customers and remain closely involved in the day\-to\-day running of the branch. We are looking for someone who leads from the front and takes genuine ownership of their restaurant.

The role

As Branch Manager, you will be responsible for the complete operation of Maccaruna, including:

• Leading the team during busy services and actively supporting wherever required


• Delivering warm, efficient and engaging customer service


• Maintaining excellent food, drink, gelato and presentation standards


• Recruiting, onboarding, training and developing team members


• Creating effective rotas and managing labour in line with sales


• Monitoring daily sales and identifying opportunities to grow revenue


• Driving upselling, average spend and repeat visits


• Managing stock, ordering, waste and product availability


• Ensuring opening, closing and cleaning procedures are completed properly


• Maintaining excellent food safety, health and safety, allergen and licensing compliance


• Completing regular checks, records and operational paperwork


• Managing delivery\-platform performance and order accuracy


• Resolving customer concerns professionally and confidently


• Reporting clearly to the Operations Manager and Directors


• Taking responsibility for the branch’s standards, culture and overall performance

About you

You will be:

• An experienced restaurant, café or hospitality manager


• Comfortable leading from the floor rather than managing from the sidelines


• Energetic, organised and commercially aware


• Confident managing a fast\-paced, high\-volume operation


• Passionate about food, hospitality and customer experience


• Able to train, motivate and hold a team accountable


• Confident working with sales, labour, stock and wastage figures


• Proactive, dependable and calm under pressure


• Highly attentive to cleanliness, presentation and detail


• Flexible and available to work weekends and key trading periods

Experience with fresh pasta, Italian food, gelato or a counter\-service restaurant would be beneficial, but strong hospitality leadership and the right attitude are most important.
