Our Head Office in Wimbledon is the nerve centre of this growing chain, and we are now looking for a driven Operations Assistant Manager to help power our next phase of expansion.
Role Overview
Reporting to the Operations Director, the Operations Assistant Manager is a pivotal, hands on role that will assist in overseeing the day to day operations of our existing restaurants while taking a lead in the set up and successful launch of new restaurant openings. You will be the link between Head Office and the restaurants, ensuring that every site runs smoothly, efficiently, and delivers the legendary Daiu experience.
Key Responsibilities
1\. New Restaurant Openings
· Lead the operational delivery of new restaurant openings, from site handover to full trading.
· Coordinate with site contractors, monitor refurbishment progress, and report progress back to the Operations Director to ensure projects are delivered on time and within budget.
· Develop and implement pre opening checklists, timelines, and standard operating procedures for each new site.
2\. Staff Recruitment \& Onboarding
· Assist in creating and executing a recruitment plan for new site staffing, including placing job advertisements, screening candidates, and coordinating interview days with the management team.
· Support General Managers in on boarding new starters, ensuring they complete mandatory training, understand Daiu’s service standards, and are ready to deliver from day one.
3\. Restaurant Set up \& Launch Support
· Work alongside the site management team during the fit out and soft launch phases to set up the restaurant: equipment installation, stock ordering, POS and systems testing, and front of house presentation.
· Be physically present during new restaurant openings to provide hands on support, trouble shoot operational issues, and ensure the first weeks of trade are as smooth as possible.
4\. Day to Day Operations Management
· Assist the Operations Director in monitoring the performance of existing restaurants (sales, cost control, labour, guest satisfaction).
· Conduct regular site visits to audit compliance with health \& safety, food hygiene (HACCP), and Daiu’s brand standards.
· Support General Managers in resolving operational challenges, from supplier issues to customer complaints.
5\. Strategic Collaboration
· Collaborate with senior management to align operational goals with Daiu’s vision and growth strategy.
· Analyse operational data and provide insightful reports that drive continuous improvement across the chain.
· Champion a positive, can do culture that inspires diverse teams and embodies Daiu’s values.
Qualifications \& Experience
· Proven experience in a restaurant operations management role, ideally within a multi site or chain environment.
· Full UK driving licence and willingness to travel regularly to restaurant locations.
· Exposure to site project management and contractor coordination.
Skills \& Competencies
· Leadership \& People Management: Proven ability to inspire, lead, and motivate diverse front line teams; comfortable coaching General Managers and supervisors.
· Communication: Excellent written and verbal communication skills, able to write clear briefs, reports, and job advertisements.Additional language skills, particularly Mandarin or Cantonese , are an advantage.
· Organisational Excellence: Highly organised with the ability to juggle multiple projects, prioritise under pressure, and keep meticulous project timelines.
· Problem Solving: Calm under pressure with a pragmatic approach to solving operational issues on the ground.
· IT Proficiency: Confident with Microsoft Office (Excel, Word, PowerPoint) and comfortable learning new restaurant management software.
