General Manager

Broken Eggs is a casual Spanish restaurant in Fitzrovia. It started in 2023 from a dark kitchen on Charlotte Street by Gabriel and his sister Marta. Today it is a vibrant, fast\-paced restaurant (30 covers inside, 15 outside) which transports guests to experience the warmth of the Mediterranean through honest, homemade food with an authentic welcome and friendly, attentive service.

Here, team members support each other and standards matter. And while service is fun and energetic, it’s built on preparation, pride and shared ownership.

We’re looking for an energetic, people\-first General Manager who leads from the floor, invests in and builds confident teams, and creates the kind of culture where both team and guests feel looked after and proud to be part of something special.

What makes this role particularly exciting is the trajectory: alongside leading the existing restaurant, you’ll play a key role in the pre\-opening of a second London location, creating a natural pathway into multi\-site leadership as the brand grows.

The role

• Lead day\-to\-day operations of a busy, fast\-paced neighbourhood restaurant


• Create a culture of genuine care, ownership and teamwork


• Inspire, develop and retain a team of 12 in a supportive, high\-standards environment


• Deliver warm, consistent, detail\-driven guest experiences


• Drive pace, preparation and pride across all services


• Foster a positive, respectful workplace where everyone feels valued and heard


• Work closely with the founder on people, culture and performance


• Plan and launch a second London restaurant


• Help shape the foundations for further growth and new openings

About you

• Experienced hospitality leader in a busy, quality\-led casual or neighbourhood restaurant


• Natural team builder who creates trust, confidence and accountability


• Organised, hands\-on and energised by fast\-moving service


• Passionate about providing an authentic hospitality experience


• Sets high standards while staying approachable and humble


• Welcomes feedback and is motivated to keep improving


• Excited by growth and the chance to evolve into multi\-site leadership


• Pre\-opening or mobilisation experience desirable
