Deputy General Manager

Job Title: Deputy General Manager – Encore Bars Hospitality Group
Location: Edinburgh (various venues)

The Role

We’re looking for a hands‑on Deputy General Manager to join our growing Edinburgh bar group. You’ll be second‑in‑command, supporting the GM across operations, team development, guest experience, and compliance. You’ll take full responsibility for the venue in the GM’s absence. This is an active, floor‑based role for someone ready to step up to senior management.

Our Venues

We currently operate four vibrant bars across Edinburgh: Boston New Town, Boston Old Town, Westside Rodeo, and Freddys – each with its own character, but all united by high standards and a party atmosphere. And we’re not stopping there – more venues are opening soon, so there’s huge room to grow with us.

What You’ll Do

• Support daily operations – openings, closings, service flow, cleanliness, and stock levels.


• Supervise Assistant Managers, Supervisors, and serving staff; coach and develop the team.


• Run shift briefings, manage rotas, attendance, and breaks.


• Handle guest complaints professionally; ensure brand service standards.


• Assist with cash‑ups, banking, stocktakes, wastage, and weekly reporting.


• Enforce licensing laws, health \& safety, fire safety, and incident reporting.


• Take full venue responsibility in the GM’s absence.

• Minimum 1 year supervisory or management experience in hospitality.


• Strong understanding of bar/restaurant operations, stock control, and cash handling.


• Excellent communication, leadership, and problem‑solving skills.


• Available for evenings, weekends, and peak periods (Festival, Christmas, etc.).


• Hold a Personal Licence (Scotland) or willing to obtain within 3 months.

• Experience with EPoS, rotas, recruitment.


• Previous high‑volume venue experience.
