Overview

We are seeking an experienced and dynamic Bar Manager to oversee bar operations across three high\-volume venues in Brixton. This is an exciting opportunity for a hands\-on hospitality professional with strong leadership, commercial awareness, and operational expertise to manage busy bars, lead large teams, and deliver exceptional guest experiences.

The successful candidate will have a minimum of 5 years’ experience in bar management and a proven track record of managing teams, stock control, events, and multi\-site operations within a fast\-paced hospitality environment.

You will be joining a very nurturing and close\-knit team.

Key Responsibilities

Operations \& Multi\-Site Logistics

  • Oversee seamless, high\-volume operations and maintain consistent service standards across all bar venues.

  • Conduct regular site visits, manage operational diaries, and ensure each venue is fully stocked and maintained.

  • Monitor venue performance and implement improvements to enhance efficiency and customer satisfaction.

  • Ensure smooth day\-to\-day operations across multiple sites.
Team Leadership \& People Management
  • Recruit, train, mentor, and develop Bar Supervisors, Bartenders, and Floor Staff.

  • Create and manage weekly rotas to ensure adequate staffing levels during peak trading periods, weekends, and major events.

  • Conduct team meetings, performance reviews, and ongoing training sessions.

  • Foster a positive, professional, and high\-performing team culture.
Stock Control \& Purchasing
  • Conduct weekly and monthly stock counts, identifying and investigating variances.

  • Manage inventory levels and oversee cellar management.

  • Order drinks, bar supplies, and consumables while maintaining cost controls.

  • Build and maintain strong relationships with suppliers.

  • Monitor stock movement and implement measures to reduce wastage and shrinkage.
Commercial \& Financial Management
  • Drive wet sales and maximise revenue opportunities across all venues.

  • Monitor and manage Gross Profit (GP) margins.

  • Implement strategies to increase profitability and operational efficiency.

  • Handle financial reconciliations, cash management, and event budgeting.

  • Analyse sales performance and produce operational reports for senior management.
Compliance, Health \& Safety
  • Ensure strict compliance with UK licensing regulations and company policies.

  • Maintain the highest standards of health, safety, cleanliness, and hygiene.

  • Ensure all staff are trained in compliance and emergency procedures.
Events \& Activations
  • Work closely with event organisers, promoters, DJs, corporate clients, and VIP guests.

  • Coordinate bar operations for private hires, corporate bookings, festivals, and special events.

  • Support the planning and delivery of venue activations and promotional events.

  • Assist in curating seasonal cocktail menus and premium drinks offerings aligned with the venue brands.
Customer Experience
  • Deliver exceptional guest service standards across all venues.

  • Handle customer feedback and resolve issues professionally and efficiently.

  • Ensure venues maintain a welcoming and vibrant atmosphere.
Essential Requirements
  • Minimum 4 years’ experience in a Bar Manager or Senior Hospitality Management role.

  • Experience managing high\-volume bars, late\-night venues, or event\-led hospitality businesses.

  • Strong leadership, organisational, and communication skills.

  • Proven experience with staff management, rota planning, stock control, and supplier management.

  • Sound understanding of GP management, budgeting, and financial reporting.

  • Excellent knowledge of UK licensing laws and health \& safety regulations.

  • Ability to work flexible hours, including evenings, weekends, and public holidays.

  • Personal Licence Holder (preferred but not essential).

  • Previous experience working in a multi\-site environment is advantageous but not essential.
