Salary is £30,831\.96 plus discretionary service charge (currently circa £3\.5K per year)

As our business continues to grow, we are delighted to offer an exciting opportunity for an experienced and passionate Bar Manager to join the Balbirnie management team.

This is a fantastic role for someone who lives and breathes hospitality, has a genuine passion for premium drinks, and takes pride in delivering exceptional guest experiences. You will lead the operation of our Library Bar, Ballroom Bar, Bistro Bar, and our seasonal outdoor pop\-up bars, ensuring every guest receives the warm, authentic Scottish hospitality for which Balbirnie is renowned.

Whether creating signature cocktails, recommending the perfect whisky or wine, or leading your team through a busy wedding, event, or outdoor celebration, you'll play a key role in creating memorable experiences for our guests.

Key Responsibilities

  • Oversee the daily operation of the Library Bar, Ballroom Bar, Bistro Bar, and seasonal outdoor pop\-up bars.

  • Lead, motivate and develop the bar team to deliver outstanding service across all outlets.

  • Create a welcoming atmosphere that reflects Balbirnie's renowned standards of Scottish hospitality.

  • Ensure consistently exceptional customer service and guest satisfaction.

  • Demonstrate extensive knowledge of cocktails, whisky, gin, wines and premium spirits.

  • Develop and maintain innovative drinks menus and seasonal offerings.

  • Manage ordering, stock control, inventory and bar costs to maximise efficiency and profitability.

  • Ensure all bars are presented to the highest standards of cleanliness, organisation and professionalism.

  • Ensure full compliance with licensing legislation, health and safety regulations, and company policies.

  • Work closely with Heads of Department to deliver seamless service for weddings, conferences, private events, restaurant operations and outdoor functions.

  • Recruit, train, coach and mentor bar team members, fostering a culture of excellence and continuous development.

  • Support the planning and operation of outdoor pop\-up bars for weddings, garden events and seasonal occasions, ensuring consistent service standards across all locations.
About You

We're looking for someone who is enthusiastic, knowledgeable and passionate about hospitality. The ideal candidate will have:

  • A genuine passion for mixology, whisky, gin and wine.

  • Excellent wine knowledge and confidence in making recommendations.

  • Previous experience in bar management (minimum one year).

  • Strong leadership and people management skills.

  • The ability to inspire and motivate a hardworking team.

  • Excellent communication and organisational skills.

  • Confidence working with a wide range of guests, from leisure visitors to corporate clients and wedding parties.

  • A reliable, professional and positive attitude.

  • The ability to build strong relationships with colleagues across all departments.

  • A Personal Licence (desirable but not essential).
Working Hours

This is a full\-time management position requiring flexibility, including evenings, weekends and public holidays, in line with the needs of the business, working 45 hours per week.

Applicants must be 18 years of age or over.
