About Us

We are a growing, award\-winning plant\-based French patisserie company, creating high\-quality patisserie and desserts for the 21st Century.

As a SALSA\-accredited food business, food safety, quality and consistency are at the heart of everything we do. We are now looking for an organised, proactive and detail\-focused Technical Assistant / Technical Manager to join our team and help us maintain and continually develop our technical and food\-safety standards.

This is an exciting opportunity for someone who enjoys working in a hands\-on food\-production environment and wants to play an important role in a growing business.

The Role

As our Technical Assistant / Technical Manager, you will be responsible for supporting and maintaining our technical, food\-safety and quality systems, ensuring that our products are manufactured safely, legally and consistently.

You will work closely with our Production Manager, pastry chefs, production team, suppliers and senior management, providing practical technical support across the business.

The role will suit someone who is equally comfortable walking the production floor, carrying out inspections and speaking with the team as they are working with specifications, records, audits and technical documentation.

Key Responsibilities

Your responsibilities will include:

  • Maintaining and developing our HACCP and food\-safety management systems.

  • Supporting ongoing compliance with SALSA standards and preparing for SALSA audits.

  • Carrying out internal audits, inspections and food\-safety checks.

  • Maintaining accurate technical documentation and records.

  • Managing and reviewing product and raw\-material specifications.

  • Maintaining the company's allergen matrix and supporting allergen controls.

  • Checking product labels and ingredient declarations for accuracy and compliance.

  • Managing supplier approval and reviewing supplier technical information.

  • Supporting effective traceability and mock\-recall procedures.

  • Coordinating product and environmental microbiological testing where required.

  • Monitoring cleaning, hygiene and GMP standards.

  • Investigating customer complaints, non\-conformances and quality issues.

  • Supporting root\-cause investigations and corrective actions.

  • Assisting with product development, recipe changes and shelf\-life assessments.

  • Supporting food\-safety, allergen and hygiene training for employees.

  • Ensuring technical records are accurate, current and readily available.

  • Working proactively with the production team to identify and resolve potential issues before they become problems.

  • Promoting a strong food\-safety and quality culture throughout the business.
About You

We are looking for someone who is organised, practical and passionate about food safety and quality.

You will ideally have experience within a food manufacturing, bakery, patisserie, chilled dessert or similar environment and have a good understanding of HACCP, food hygiene, allergens and GMP.

You will be someone who:

  • Has excellent attention to detail.

  • Is highly organised and able to manage multiple priorities.

  • Has a practical understanding of food production.

  • Is confident working with technical documentation and computer\-based systems.

  • Can communicate effectively with both production teams and management.

  • Is confident raising concerns and challenging non\-compliance when necessary.

  • Takes ownership and follows actions through to completion.

  • Has a proactive, problem\-solving approach.

  • Can work independently while also being an effective member of a small team.

  • Is comfortable working both on the production floor and in an office environment.

  • Takes pride in maintaining high standards of food safety, quality and legality.
Experience \& Qualifications

Essential

  • Previous experience in a food production, food manufacturing, bakery, patisserie or similar environment.

  • Good understanding of HACCP and food\-safety principles.

  • Knowledge of allergen management and food hygiene.

  • Strong administrative and organisational skills.

  • Excellent attention to detail.

  • Good written and verbal communication skills.
Desirable
  • Previous experience within a SALSA\-accredited food business.

  • HACCP Level 3 or equivalent.

  • Food Hygiene Level 3 or equivalent.

  • Internal auditing experience or qualification.

  • Experience with food specifications and technical documentation.

  • Experience with microbiological testing and environmental monitoring.

  • Knowledge of UK food labelling and allergen legislation.

  • Experience within bakery, patisserie, chilled desserts or similar food production.
