About Us
The Prickly Pear is a new Mexican pub/restaurant based in Bruton, Somerset. We’re building a food offering rooted in bold flavours, seasonality, and collaboration. Our kitchen works closely with our local market garden, creating a menu that reflects both the local landscape and current seasonal produce.
We’re now looking for a committed and capable Sous Chef to help lead our growing team.
The Role
As Sous Chef, you’ll work closely with the Head Chef in both service and strategy \- maintaining consistency on the pass, managing day to day operations, and helping to shape the energy of the kitchen. You’ll take a hands on role in prep, training, team morale, and menu input.
This is a great opportunity for someone with leadership experience who wants to help build something from the ground up, in a positive and supportive environment.
Key Responsibilities
- Lead and support the team during prep and service
- Maintain high standards of food quality, consistency, and presentation
- Work with the Head Chef to develop menus based on seasonal produce
- Communicate with the market garden about availability and planning
- Uphold food hygiene and safety standards at all times
- Assist in training and mentoring junior chefs
- Take responsibility for stock control, ordering, and reducing waste
- Help manage kitchen rotas and shift planning
- Step up in the Head Chef’s absence
- At least 2\-3 years experience in a senior CDP or Sous Chef role
- Strong cooking ability across sections
- Experience in busy, quality focused kitchens
- Ability to lead a team calmly and confidently
- Interest in seasonality, sustainability, and real ingredients
- Food hygiene certification (Level 2 or above)
- Organised, reliable, and hands on

Pay: £29,000\.00\-£31,000\.00 per year
