The Role
We are looking for an experienced Butchery Assistant Manager to join our team in Knowle.
Working closely with the Butchery Manager, you will support the daily operation of the butchery department while remaining hands\-on with preparation, production, displays and customer service.
You will help lead the butchery team, maintain our standards and contribute towards the department’s sales, margin, stock and waste targets. You will also take responsibility for the department in the Butchery Manager’s absence.
Key Responsibilities
- Support the Butchery Manager with the daily operation of the department
- Take responsibility for the department in the Butchery Manager’s absence
- Lead by example and help maintain consistently high standards
- Prepare, cut and display meat to an exceptional standard
- Maintain attractive, well\-stocked Butchery and Deli counters
- Deliver knowledgeable, friendly and helpful customer service
- Support ordering, stock control, stock rotation and product availability
- Help manage waste, margins and departmental performance
- Identify opportunities to utilise trim and develop Deli products
- Support seasonal ranges, promotions and new\-product launches
- Ensure food\-safety, HACCP, health\-and\-safety and company procedures are followed
- Maintain excellent cleanliness, organisation and back\-of\-house fridge standards
- Assist with deliveries, product checks and accurate stock management
- Support, motivate and develop colleagues within the department
- Work with the Butchery Manager and wider management team to achieve sales and performance targets
- Previous experience working as a skilled retail butcher
- Strong traditional butchery and product knowledge
- Supervisory, team\-leader or management experience
- Experience of ordering, stock control and waste management
- Excellent customer\-service and communication skills
- A good understanding of food safety and HACCP
- Strong commercial awareness
- The ability to lead by example and maintain high standards
- A positive, proactive and reliable approach
- Flexibility to work five days per week, including one weekend day
- Previous experience as a Butchery Assistant Manager, Butchery Manager or senior retail butcher
- Experience within a premium butcher, farm shop or food\-retail environment
- Experience working with sales, margin, stock and waste targets
- Relevant Food Safety qualification
