Marlfield House is currently recruiting an experienced Restaurant Operations Manager to join our established management team.
Marlfield House is a family\-run, 26\-bedroom country house hotel which has been renowned for its warm and generous hospitality for almost 50 years. Located just outside Gorey, Co. Wexford, the hotel has two award\-winning restaurants — The Conservatory Restaurant and The Duck Restaurant — together with cocktail bars, private dining, room service and approximately 25 weddings and exclusive\-use events each year.
The fine\-dining Conservatory Restaurant has received numerous accolades throughout Marlfield's history, while The Duck, which opened in 2015 and is listed in the Michelin Guide, offers a more casual dining experience and has received many awards for its food, service and atmosphere.
Our chefs work with fresh, seasonal ingredients, including produce from our own kitchen garden and quality ingredients sourced from the locality.
The Role
We are looking for an energetic, enthusiastic and experienced Restaurant Operations Manager with a genuine passion for hospitality, food, wine and exceptional guest service.
Working closely with the senior management and supervisory teams, the Restaurant Operations Manager will oversee the day\-to\-day operation of our restaurants and bars and play an important role in developing and maximising opportunities across our Food \& Beverage operation.
The successful candidate will be a natural leader who can develop, train and motivate a team, maintain consistently high standards and ensure that our guests receive warm, professional and personalised service.
The position requires a strong operational presence as well as commercial awareness, with responsibility for staffing, training, rostering, costs, margins, stock control and the achievement of agreed departmental targets.
Key Responsibilities
- Oversee the day\-to\-day operation of The Conservatory and The Duck restaurants, together with the associated cocktail bars and Food \& Beverage services.
- Ensure all outlets are appropriately staffed, organised and supervised.
- Lead, motivate and develop the front\-of\-house team, creating a positive and professional working environment.
- Maintain exceptional standards of service, presentation, ambience and hospitality throughout all Food \& Beverage areas.
- Ensure guests receive warm, attentive, professional and personalised service at all times.
- Recruit, induct, train and develop team members to Marlfield House service standards.
- Organise and deliver ongoing staff training and monitor team performance.
- Manage staff rosters, staffing levels and holiday planning in line with the operational requirements of the business.
- Monitor staffing costs, departmental margins, GP and other key financial targets.
- Manage stock control, ordering and purchasing in accordance with company procurement procedures.
- Work closely with the kitchen team to ensure excellent communication and seamless service between front and back of house.
- Maintain high standards of restaurant, wine, cocktail and premium beverage service.
- Monitor and manage the restaurant reservation system, including ResDiary, to maximise availability and revenue.
- Drive revenue through excellent service, effective reservations management and appropriate upselling.
- Respond to guest feedback promptly, professionally and with genuine care.
- Support the successful delivery of weddings, private dining, special occasions and other events in keeping with Marlfield House standards.
- Work collaboratively with senior management and other departments to continually develop and improve the guest experience.
The successful candidate will:
- Have a minimum of four years' relevant Food \& Beverage supervisory or management experience, ideally within a quality 4\- or 5\-star hotel or restaurant environment.
- Have proven experience managing restaurant and bar operations and leading a sizeable team of full\- and part\-time employees.
- Be energetic, enthusiastic, ambitious, hardworking and results\-orientated.
- Be strongly customer\-focused and standards\-driven.
- Be a natural host with the ability to build genuine rapport and lasting relationships with guests.
- Have excellent leadership, communication and interpersonal skills.
- Have the ability to motivate, inspire, train and empower team members to continually improve performance.
- Be commercially aware, with a proven understanding of staffing costs, GP, budgets, stock control and profitability.
- Have strong organisational skills and the ability to remain calm, polished and professional in a busy environment.
- Have excellent technical knowledge of restaurant service.
- Have a genuine passion for and good knowledge of food, wine, cocktails and mixology.
- Be proficient in restaurant reservation systems, POS systems, Excel and relevant hotel technology.
- Be fluent in English.
