Restaurant General Manager – Italian Restaurant

About the Role

We are seeking an exceptional and highly driven Restaurant General Manager to lead our premium Italian restaurant in London. This is a hands\-on leadership role requiring a commercially minded hospitality professional with a proven track record of delivering outstanding guest experiences, driving financial performance, developing high\-performing teams, and maintaining the highest operational standards.

The successful candidate will be responsible for the overall management of the restaurant, ensuring excellence across service, people, finance, compliance, and guest satisfaction while upholding the values and reputation of the brand.

Key ResponsibilitiesLeadership \& Team Management

  • Provide strong leadership, direction, and motivation to all front\-of\-house and management teams.

  • Recruit, train, coach, develop, and retain exceptional hospitality professionals.

  • Foster a positive, high\-performance culture focused on accountability, teamwork, and guest satisfaction.

  • Conduct regular performance reviews and implement development plans for team members.

  • Lead by example on the restaurant floor, ensuring visible and effective management presence during service.
Guest Experience
  • Deliver exceptional hospitality standards and create memorable guest experiences.

  • Build strong relationships with regular guests, VIPs, local businesses, and key stakeholders.

  • Handle guest feedback and complaints professionally and proactively, ensuring swift resolution.

  • Continuously seek opportunities to enhance service standards and guest satisfaction.
Financial \& Commercial Performance
  • Take full ownership of restaurant P\&L performance.

  • Achieve and exceed revenue, profitability, labour, and cost control targets.

  • Analyse sales reports, KPIs, and operational data to drive business performance.

  • Identify opportunities to increase covers, average spend, guest retention, and profitability.

  • Manage labour scheduling effectively to maximise productivity and efficiency.
Operations
  • Ensure smooth day\-to\-day operation of the restaurant, bar, terrace, and private dining areas.

  • Maintain exceptional standards of cleanliness, presentation, service, and operational execution.

  • Oversee stock management, ordering, supplier relationships, and inventory control.

  • Ensure all company policies, procedures, and service standards are consistently implemented.

  • Collaborate closely with the Head Chef and kitchen leadership team to deliver seamless guest experiences.
Compliance \& Health \& Safety
  • Ensure full compliance with all licensing, health \& safety, food safety, employment, and company regulations.

  • Maintain accurate records and operational documentation.

  • Lead audits and inspections confidently and professionally.

  • Ensure all staff are fully trained and compliant with relevant legislation and company procedures.
Business Development \& Marketing
  • Support marketing initiatives, local partnerships, events, and promotional activities.

  • Develop relationships within the local community and corporate market.

  • Drive private dining, events, and special occasion bookings.

  • Work closely with senior management to implement business growth strategies.
Candidate Requirements
  • Minimum 3\-5 years' experience as a General Manager within a premium, luxury, or high\-volume restaurant environment.

  • Strong knowledge of Italian cuisine, wine, and hospitality culture preferred.

  • Proven experience managing restaurant P\&L and achieving financial targets.

  • Exceptional leadership, communication, and people\-management skills.

  • Strong commercial awareness and analytical capabilities.

  • Experience managing large teams and multiple revenue streams.

  • Excellent understanding of UK hospitality legislation and employment law.

  • Personal Licence Holder and DPS experience desirable.

  • Ability to remain calm, professional, and decisive under pressure.
