Restaurant & Bar Manager
Restaurant \& Bar Manager
The Rose \& Crown \| Upper Farringdon, near Alton, Hampshire
£35,000–£38,000 basic salary, plus tips and performance bonus
Permanent · 45 hours across five days · Monday and Tuesday off
We’ve put a lot into The Rose \& Crown since taking over five months ago, and we’re proud of the direction it’s heading. Now we’re looking for an experienced Restaurant \& Bar Manager to join us and play a proper part in its future.
We’re a village pub with an ambitious kitchen, a growing events business and a community that matters to us. We want people to travel for the food and wine, and for our regulars to feel just as comfortable calling in for a pint. Getting both right is important.
As owners, we both work full time in the business — Ryan leading the kitchen and Sarah leading front of house. You’ll work hand in hand with, and report to, both of us. Together, we’ll form the senior management team, with clear communication, shared standards and the same ambition for the pub.
You’ll have real responsibility, room to contribute your ideas and our support in putting them into practice. In return, we need someone who brings experience, sound judgement and the confidence to follow things through.
The role
You’ll take ownership of the day\-to\-day running of the restaurant and bar, leading a front\-of\-house team of around ten, supported by two capable supervisors.
That means being present on the floor, keeping service organised and making sure the team knows what’s expected. You’ll notice when a guest needs attention, when someone needs a hand and when a small issue is about to become a bigger one.
Your responsibilities will include:
- Running service with confidence, keeping the kitchen, bar and floor working well together.
- Training and developing staff, leading useful briefings and addressing performance issues fairly and promptly.
- Planning rotas with us, matching staffing to trade and keeping labour costs within agreed budgets.
- Managing drinks ordering, stock rotation and wastage, and using monthly stocktakes to improve gross profit without tying up money in slow\-moving stock.
- Growing food and drinks sales through good recommendations, with particular attention to wine knowledge and service.
- Getting to know our regulars and building relationships within the village and surrounding area.
- Handling complaints thoughtfully, following an approach we agree together, resolving the immediate issue and helping prevent it happening again.
- Working with us to organise and deliver weddings, private dining and events.
- Maintaining dependable standards for opening, closing, cashing up, cleanliness and safe service.
You’ll already have successfully managed a quality food\-led pub or restaurant. You’ll understand the commercial side of the job and be able to talk us through improvements you’ve made in a previous business.
Good wine knowledge is important, as is being able to share it in a way that makes guests comfortable and staff more confident. You should enjoy food, take an interest in what’s coming out of the kitchen and care about how it reaches the table.
We’re looking for someone calm, personable and straightforward. Someone who can earn the team’s respect, have a difficult conversation without confrontation and take responsibility without needing constant direction.
You’ll also be comfortable working closely with involved owners: sharing ideas, listening, challenging constructively and agreeing a way forward. We want a long\-term colleague we can trust, and who can trust us.
A personal licence to sell alcohol is preferred. If you don’t already hold one, you’ll need to be willing to obtain it before joining us or within your first month at The Rose \& Crown.
What we offer
- £35,000–£38,000 basic salary, depending on relevant experience and demonstrated results.
- A share of tips and service charge, estimated at £5,000–£8,000 annually based on current trading. This is variable and not guaranteed.
- A separate performance bonus linked to agreed drinks profitability targets, with service standards and stock availability protected. Full terms agreed before appointment.
- 45 hours across Wednesday to Sunday, including evenings and weekends, with Monday and Tuesday off.
- Ordering, rota planning and training included within your working hours, with opening and closing duties shared across the management and supervisor team.
- Staff meals, staff discounts, free parking and training.
- The opportunity to shape the restaurant and bar, develop your team and see the results of your work.
Please send your CV through Indeed with a few lines about something you improved in your last role, what you did and the difference it made. Please include your notice period.
Our preferred start date is 5 October 2026, although we can be flexible for the right person. If a move to the area would be involved, we’re happy to discuss individual circumstances confidentially during the interview process.
We care a great deal about this pub. If you’re looking for somewhere to settle, contribute and build something you can be proud of, we’d like to meet you.
