Vermilion is one of Manchester’s most distinctive hospitality, dining and events destinations, combining a restaurant and bar with a range of private dining, wedding and event spaces.
We are seeking an experienced, hands\-on and commercially driven General Manager to lead the day\-to\-day operation of Vermilion, raise standards, strengthen the team and help grow the business.
This is a senior leadership role responsible for delivering exceptional standards across our restaurant, bar and event spaces, while driving revenue, controlling costs and building a strong, accountable team.
The Role
The General Manager will take full ownership of the venue operation, ensuring consistently high standards of service, presentation, guest experience and commercial performance.
You will lead managers and department heads across restaurant, bar and events, while working closely with ownership on strategy, standards and business growth.
Key Responsibilities
- Lead the overall operation of the venue
- Maintain consistently high standards of service, hospitality and presentation
- Manage and develop restaurant, bar and events teams
- Recruit, train, coach and performance\-manage staff
- Ensure managers are accountable for their departments and responsibilities
- Drive restaurant, events and corporate revenue
- Work closely with sales and events teams to maximise enquiries and conversions
- Ensure our brand maintained at high standards.
- Monitor labour costs, food costs, stock, wastage and overall profitability
- Manage rotas and staffing levels efficiently
- Deliver and monitor operational procedures and service standards
- Oversee large events, private functions and VIP bookings
- Handle guest feedback and resolve issues professionally
- Ensure health \& safety, licensing and compliance requirements are met
- Monitor KPIs and provide regular performance updates to ownership
- Identify ways to improve efficiency, standards and profitability
You should be comfortable leading from the front, managing managers, making decisions and maintaining high standards during busy services and large events and overall brand.
Ideally, you will have:
- Previous General Manager, Deputy General Manager or senior hospitality management experience
- Strong restaurant and/or events experience
- Experience managing large teams
- Excellent leadership and people\-management skills
- Strong commercial awareness
- Experience with labour control, budgets and cost management
- Excellent guest service standards
- Confidence managing busy services and large events
- Strong communication and organisational skills
- A proactive, hands\-on management style
- Experience within a premium or high\-volume hospitality environment would be an advantage
