General Manager – Sette Pizzeria e Trattoria, Malahide
€50,000–€70,000 DOE \+ KPI bonus \| Full\-time, permanent

Sette has been a Malahide favourite since 2022\. We're an authentic Italian pizzeria and trattoria, and we're proud of the ingredients we source and the food we make with them. We're also entering our biggest chapter yet. New industry\-leading kitchen equipment has expanded our menu, and our catering and takeaway business is growing.

We're looking for an experienced General Manager to run the restaurant day to day and help lead that growth. You'll report directly to the Managing Director. This is a hands\-on role with real influence on the business.

What you'll do

• Run daily front\- and back\-of\-house operations


• Recruit, train, roster and develop the team, keeping labour cost in line with sales


• Own sales and margin targets, weekly reporting, cash reconciliation and stock control


• Manage suppliers, ordering and our Italian wine and drinks offering


• Work with the Head Chef on menu development using sales data and guest feedback


• Make sure the team knows our ingredients and producers and can share that story with guests


• Ensure HACCP, health and safety, licensing and responsible\-serving compliance


• Build the catering and takeaway side of the business


• Set the standard for hospitality on every shift

• 3\+ years as a GM or Assistant GM in a busy restaurant, ideally a licensed premises


• A proven ability to control labour and costs while growing sales


• Strong bar and wine knowledge


• HACCP training (Level 2 minimum)


• Confidence with the Square POS, rostering tools and basic P\&L reporting


• A natural leader who stays calm and visible on the floor at peak times


• Availability for evenings and weekends

• A background in Italian hospitality, or a real passion for Italian food, wine and culture


• Knowledge of Italian regional cooking, ingredients or wines


• Some Italian language

• €50,000–€70,000 depending on experience, plus a monthly KPI bonus
