We're looking for someone to manage a busy and vibrant pub located near Liverpool Street station
The daily responsibilities include:
Operations \& Licensing
- Operational Efficiency: Take full ownership of all venue operations, implementing efficiencies to ensure the venue runs smoothly, safely, and profitably.
- Venue Oversight: Act as the primary key holder and take full operational responsibility for the venue, ensuring the site is secure, compliant, and well\-maintained at all times.
- Compliance: Ensure all licensing policies and procedures are followed to the letter, acting as the main point of contact for local authorities, police, and emergency services.
- Service Standards \& Environment: Maintain consistently high standards across the venue, including cleanliness, atmosphere, lighting, and overall guest experience.
- Floor Leadership: Lead from the floor during key trading periods, actively managing service flow, customer experience, and team performance in real time.
- Kitchen Collaboration: Work in partnership with the Head Chef to deliver food performance, holding standards on quality, consistency, and gross profit.
- Safety Protocols: Ensure all health and safety procedures are followed, including risk assessments and compliance checks.
- Complaint Handling: Take full ownership of customer complaints and incidents, acting as the lead point of contact and ensuring procedures are followed correctly.
- Cleaning \& Maintenance: Oversee all cleaning operations and maintenance, ensuring contracts are fulfilled, and the venue remains in top condition.
- P\&L Accountability: Take full ownership of the venue’s financial performance, including revenue, labour, and gross profit.
- Revenue Delivery: Deliver weekly, monthly, and annual revenue targets, driving performance across all trading periods.
- Spend Per Head: Drive spend per head through team training, upselling, and effective service delivery.
- Labour Control: Manage staffing levels in line with forecasted revenue to achieve target labour percentages.
- Forecasting: Own weekly forecasting, using historical data, events, and trading patterns to inform staffing and stock decisions.
- Financial Awareness: Work closely with the Operations team and accounts to review performance, challenge results, and drive improvements.
- Reporting: Ensure accurate and timely reporting across daily (EON), weekly, and monthly financials.
- Commercial Commentary: Provide clear daily and weekly commercial commentary, explaining performance vs forecast and previous year.
- End of Day Control: Take full ownership of end\-of\-day procedures, including cashing up, reporting, and performance summaries.
- Team Ownership: Act as line manager for all venue staff, including management, bar, and floor teams.
- Staff Planning: Build and manage rotas in line with forecasted revenue and business needs.
- Recruitment \& Training: Own recruitment, inductions, and ongoing training across all levels of the team.
- Team Leadership: Create a high\-performance culture, setting clear expectations and holding the team accountable for standards and results.
- Motivation \& Retention: Drive team engagement, retention, and progression through strong leadership.
- Policy Adherence: Ensure all staff operate in line with company policies and procedures.
- Performance Management: Manage performance effectively, addressing any issues or underperformance promptly.
- Stock Control: Take full ownership of stock ordering, stocktakes, and variance management.
- Stock Variance: Take ownership of stock variance, investigating discrepancies and implementing controls to minimise loss.
- System Ownership: Ensure Marketman and EPOS systems are fully utilised, accurate, and embedded across the team.
- Performance Tracking: Monitor and deliver key KPIs, including GP, wastage, and discount control.
- Audits: Conduct regular audits and investigate discrepancies
- Approvals \& Controls: Operate within agreed financial controls and approval limits, escalating where required.
This role includes a bonus based on revenue delivery, labour control, gross profit, and operational standards.
Expectations
As General Manager, you are fully accountable for the venue’s performance and expected to take ownership of both day\-to\-day operations and overall business results.
- You will lead from the front, driving service standards, team performance, and financial results.
- You should be comfortable making commercial decisions, managing pressure during peak service, and running the venue independently.
- This role requires a strong presence on the floor, including evenings and weekends in line with the needs of the business.
- We are looking for someone who takes pride in running a tight, commercially strong operation and is confident owning both the detail and the bigger picture.
- You will be expected to spot issues early, act quickly, and take ownership
- You are expected to run the venue as if it were your own business, taking full responsibility for both performance and standards.
- Success in this role is measured through revenue delivery, labour control, GP performance, operational standards, and team retention.
Pay: £40,000\.00\-£45,000\.00 per year
