The Old Brewery is looking for an experienced, energetic General Manager to take the reins of one of Cardiff city centre’s newest venues.
Built around Welsh character, great hospitality and a proper pub atmosphere, The Old Brewery celebrates the best of Wales, from Welsh beers and locally inspired food to live music, big sporting occasions and a warm Cardiff welcome.
We’re looking for a GM who can make the venue their own: someone who understands that a great venue isn’t just about what’s behind the bar, it’s about the atmosphere, the people and giving customers a reason to come back.
What We’re Looking For:
You’ll be a hands on, commercially minded hospitality leader who loves being on the floor, developing people and building a busy venue.
You’ll have a proven track record in hospitality management, ideally within a high\-volume pub, bar, food\-led or live entertainment environment.
We want someone with personality, energy and ambition. You’ll be comfortable driving sales, controlling costs and managing the numbers, but equally happy jumping behind the bar, talking to customers or leading the team through a packed Saturday.

- Driving sales, profitability and overall venue performance
- Managing labour, stock, margins and controllable costs
- Developing local sales and marketing activity, including social media and events
- Creating a strong calendar of live music, sport and key trading occasions
- Recruiting, training, motivating and developing the venue team
- Maintaining excellent standards of cleanliness, presentation and customer experience
- Ensuring full compliance with licensing, food safety, health \& safety and all legal requirements
- Managing budgets, forecasts and business plans
- Working closely with the Breaking Brands senior team to develop and grow the business
- Previous General Manager experience within a high\-volume hospitality venue
- A strong commercial mindset and understanding of venue P\&L
- Proven ability to drive sales while controlling labour and operating costs
- Strong leadership and people\-management skills
- Good knowledge of licensing, health \& safety, food safety and HR procedures
- Confidence managing both wet and food led operations
- The ability to lead from the front and set the standard for your team
- A creative, proactive and self\-motivated approach
- Personal Licence required, you will act as DPS

The Role
Job Type: Full\-time
Hours: Minimum 45 hours per week, including evenings and weekends
Location: The Old Brewery, Cardiff
Applicants must be able to reliably commute to Cardiff or relocate before starting the role.
