ll Trillo, Chelsea’s much\-loved fine dining Italian restaurant is seeking an experienced and personable Floor Manager to join it’s friendly front\-of\-house team on a full\-time basis. The role offers great benefits and a salary of £36,000 to £37,000 per year (depending on experience).
As Floor Manager your duties will be varied, include managing reservations, meeting and greeting customers, taking orders, table service, prepping the restaurant before service, as well as light bar duties, such as opening/pouring wine and potentially cocktail making.
On the busy weekend shifts, you will lead our team of waiters in the main restaurant, allowing the Assistant Manager to focus on customer activity at the front of the restaurant.
The role requires you to fully support, the General Manager and Assistant Manager, by troubleshooting any issues that may arise during service, insuring service and standards remain of a high quality, as well as sharing skills/mentoring any junior staff. You will also step\-up to run one shift per week to cover the Assistant Manager's day off.
We're seeking an industry professional with an excellent command of English, who thrives when working in a busy environment with a buzzing atmosphere, where high quality food and fine wines are served, and who boasts outstanding customer service and attention to detail.
The role will cover five days a week. The restaurant is closed on Mondays, open for dinner Tuesdays to Sundays, with a lunch service only on Saturdays and Sundays. Two days\-off per week will be allocated for this role \- one will be on a Monday (as the restaurant is closed), the other will be allocated for a Tuesday or Wednesday. An example of a typical working week for this role will look as followed:
\- Mondays: OFF
\- Tuesdays: OFF
\- Wednesdays: 5pm to close (between midnight and 1am)
\- Thursdays: 5pm to close (between midnight and 1am)
\- Fridays: 5pm to close (between midnight and 1am)
\- Saturdays: 1pm to midnight (one hour break)
\- Sundays: 11am to 5pm (one hour break) / 6pm to close (between 11pm and 12pm)

OUR IDEAL CANDIDATE WILL HAVE...
- Minimum of six months previous experience as a Senior Waiter in a busy, fast\-paced restaurant
- Ability to carry three plates
- Knowledge and experience in cocktail making
- The ability to deliver high standards and work under pressure
- Confident, professional and welcoming personality
- Great communication and organising skills
- Previous experience of fine dining waiting
- A passion for food and fine wines (knowledge of fine wines is a plus)
- The ability to work closely with the management team and be a team player
- Outstanding standards of personal presentation, hygiene and grooming
- Be passionate and enthusiastic about their job
- Be willing to work five days a week, average 48 hours
- Be willing to work evening shifts and weekends
- Have the right to work in the UK
- An excellent command of spoken English (Italian language is a plus)
- 30 years’ experience in the hospitality business, permanent contract with base salary \+ performance bonus and training on the job
- A full\-time position of 48 hours per week, with a salary of £36,000 to £37,000 per year
