About The Role

Step into a role where no two days are the same. As our Conference, Banqueting \& Restaurant Manager, you'll orchestrate a wide array of events and services. One day you might be leading the team through a busy restaurant lunch service, the next you'll be coordinating the fine details of a large\-scale wedding or corporate conference. Your day\-to\-day will involve everything from strategic planning of staff rotas and resources to hands\-on leadership on the floor, ensuring every guest interaction is flawless.

Operational Management

  • Manage the day\-to\-day operations of the restaurant, conference, and banqueting departments, ensuring exceptional service standards across all areas.

  • Oversee the planning, coordination, and execution of weddings, conferences, corporate events, banquets, and private functions, ensuring every event is delivered to the highest standard.

  • Work closely with the Sales, Events, Kitchen, and Operations teams to ensure seamless communication and event delivery from enquiry through to completion.

  • Lead all food and beverage service operations within the restaurant and conference and banqueting facilities.

  • Ensure efficient staffing, rotas, and resource planning to meet the varying demands of restaurant trade and scheduled events.

  • Monitor guest satisfaction, service quality, and operational performance, implementing improvements where required.

  • Conduct pre\-event briefings and post\-event reviews to ensure continuous improvement and client satisfaction.

  • Maintain exceptional standards of presentation, cleanliness, and safety throughout all restaurant, conference, and event spaces.

  • Support wider hotel operations and cover Duty Manager shifts as required.
Conference \& Banqueting Management
  • Take overall responsibility for the successful delivery of weddings, conferences, exhibitions, corporate meetings, gala dinners, charity events, and social functions.

  • Liaise with event organisers, wedding couples, conference clients, and key stakeholders to ensure expectations are understood and exceeded.

  • Coordinate room set\-ups, event logistics, food and beverage service requirements, and staffing plans for all functions.

  • Ensure conference and banqueting facilities are presented to the highest standards and fully prepared prior to each event.

  • Manage client feedback and resolve any issues promptly and professionally to ensure a positive guest experience.
Team Leadership
  • Lead, inspire, train, and develop a team of up to 35 restaurant, conference and banqueting colleagues.

  • Conduct regular team meetings, briefings, and training sessions to ensure service excellence and operational consistency.

  • Drive a culture of teamwork, accountability, professionalism, and outstanding guest service.

  • Support recruitment, onboarding, performance management, succession planning, and employee engagement initiatives.

  • Coach and mentor supervisors and team leaders to build internal talent and strengthen departmental performance.

  • Ensure effective communication between restaurant, banqueting, kitchen, and hotel departments.
Financial Management
  • Manage departmental budgets.

  • Monitor sales performance and implement initiatives to maximise revenue opportunities across the restaurant lunch , dinner and coffee dock , and beverage function business.

  • Conduct regular stock takes and investigate variances.

  • Ensure accurate cash handling procedures and compliance with hotel policies.
Guest Experience
  • Deliver exceptional customer service and ensure all guest feedback is addressed promptly and professionally

  • Build positive relationships with guests, clients, and function organisers.

  • Actively drive service excellence and a culture of hospitality throughout the team.
Required Criteria
  • Proven experience in managing restaurant, conference, and banqueting operations.

  • Strong leadership skills with experience in managing and developing a sizeable team (e.g., up to 35 colleagues).

  • Demonstrable experience in food and beverage service operations management.

  • Experience working closely with Sales, Events, and Kitchen teams to ensure seamless event delivery.

  • Ability to manage departmental budgets and maximise revenue opportunities.
Desired Criteria
  • Experience covering Duty Manager shifts within a hotel environment.

  • Experience working within a progressive and supportive hotel group.

  • Proven ability to monitor and improve guest satisfaction and service quality through feedback and continuous improvement.

  • Experience with recruitment, onboarding, and performance management processes.
