Assistant General Manager - The Delphine
THE VENUE
The Delphine is an all\-day café bar and restaurant in the courtyard of Princes Square on Buchanan Street, Glasgow city centre. The venue operates from early morning coffee and pastries through brunch, lunch and dinner, into late\-night cocktails and champagne. It is a European restaurant built on Scottish produce, with a cocktail bar and wine list at its heart, a private dining room for up to 100 guests, and exclusive hire for up to 200\. The Delphine is part of The Superlative Collection, Base Scotland's premium dining division.
ROLE PURPOSE
The Assistant General Manager supports the General Manager in running The Delphine as a commercially strong, well\-loved, high\-standard venue across all dayparts — breakfast, brunch, lunch, dinner and late bar trade. The role takes full accountability for the floor when leading a shift, deputises for the General Manager in their absence, and is central to building a team that delivers a consistently excellent guest experience from first coffee to last cocktail.
KEY RESPONSIBILITIES
Commercial Performance
- Support the GM in delivering sales, wage cost and GP targets across all dayparts.
- Manage labour scheduling against forecasted trade, keeping wage percentage on target while protecting service standards at busy periods (weekend brunch, private dining, late bar).
- Monitor stock, wastage and cost control in line with Base Scotland reporting requirements.
- Contribute to the planning and delivery of promotions, seasonal menu launches and events.
- Lead, coach and develop Duty Managers, Supervisors and Team Members, acting as a visible and credible leader on the floor.
- Own the shift rota in partnership with the GM, ensuring fair, compliant scheduling that matches trade patterns across the day.
- Support recruitment, induction and training for new team members, embedding Base Scotland's standards and The Delphine's service style from day one.
- Conduct or support performance reviews, disciplinary and grievance processes in line with company policy and with support from People \& Projects.
- Take full charge of the venue when running a shift, covering all areas — café bar, dining room, private dining and cocktail bar.
- Maintain brand and presentation standards across the venue, ensuring the space, menus and service reflect The Delphine's positioning.
- Ensure smooth handover between dayparts, from breakfast service through to late bar close.
- Support delivery of venue hire and private dining bookings, working with the events process to ensure a seamless guest experience.
- Own the guest experience on shift, resolving complaints and service issues promptly and setting the tone for the team.
- Ensure full compliance with food safety, health \& safety, licensing and allergen procedures, including up\-to\-date allergen documentation for every menu.
- Carry out opening/closing checks, cash handling and till procedures in line with company process.
- Act as a keyholder and hold personal licence responsibilities as required.
Essential
- Proven experience as an Assistant Manager or Duty Manager in a high\-volume, multi\-daypart restaurant, café bar or premium hospitality venue.
- Strong floor leadership — confident running a full shift solo and calm under pressure during peak trade.
- Working knowledge of rota and labour management, stock control and basic P\&L drivers.
- Sound understanding of food safety, allergens and licensing requirements.
- A natural people\-developer who gets the best out of a team.
- Personal Licence holder.
- Experience with private dining, venue hire or events.
- Experience with digital scheduling tools (e.g. Rotaready) and EPOS systems.
Reports to the General Manager, The Delphine, with a dotted line into Base Scotland's Operations team. Works closely with Duty Managers and Supervisors, the Head Chef and kitchen team, and central support functions including People \& Projects, Finance and the Superlative Collection marketing team
Pay: £33,000\.00\-£34,000\.00 per year
